摘要(Abstract):

羊肉以富含蛋白质和微量元素、胆固醇含量低及味道鲜美等特点而深受消费者喜爱。由于受到草场类型、牧草种类及其饲用价值、放牧时肉羊运动量的不同以及选择性采食等因素的影响,放牧羊肉的营养价值和口感等品质均较舍饲羊具有明显差异。因此,本文主要从胴体重、脂肪含量、肌肉感官品质(肉色、嫩度和风味等)、脂肪酸水平及氧化稳定性等方面综述了放牧及放牧加补饲的饲养方式对肉羊胴体及肉品质产生的影响,为相关研究领域及消费者提供参考资料。
Mutton is an excellent protein source and provides important minerals such as iron and zinc. Furthermore, the market preference is changing and the demand for more healthy food is increasing, meaning that animals raised on grazing systems can be a good strategy to meet the consumer demand for lean meat. However, there are some factors that can change the meat quality and carcass characteristics(forage species and cultivar, feeding length, climate, forage management, supplementation, physical exercises, diet selection, animal breed, animal individual genetic aspects, and others factors). Therefore, this review aims to summarize the relevant published information about the effects of grazing and supplement of feed under grazing condition systems on the carcass and meat quality characteristics of mutton sheep.
