葡萄籽原花青素对生长育肥猪肉品质、抗氧化性能和脂肪酸组成的影响
Effects of Grape Seed Procyanidins on Meat Quality,Antioxidant Properties and Fatty Acid Composition of Growing-Finishing Pigs

摘要(Abstract):

试验旨在研究日粮中添加葡萄籽原花青素(GSPs)对生长育肥猪背最长肌肉品质、常规养分、抗氧化性能、脂代谢及脂肪酸组成的影响。选取48头初始体重(30.85±3.12)kg的杜×长×大三元杂交猪,随机分为4组,每组3个重复,每个重复4头。对照组饲喂基础日粮,GSPs150、GSPs200、GSPs250组分别在基础日粮中添加150、200、250 mg/kg GSPs,预试期7 d,试验期90 d。结果表明:与对照组相比,GSPs200组生长育肥猪背膘厚降低了27.18%(P<0.05),GSPs250组猪背最长肌的pH24h提高了3.95%(P<0.05),GSPs各组猪背最长肌蒸煮损失均降低(P<0.05);日粮添加GSPs提高了肌肉粗蛋白质含量(P<0.05),250mg/kg组粗脂肪含量低于对照组(P<0.05);与对照组相比,GSPs各组猪背最长肌超氧化物歧化酶活性均提高(P<0.05),丙二醛含量均降低(P<0.05);与对照组相比,GSPs200和GSPs250组猪背最长肌甘油三酯和胆固醇含量降低(P<0.05),GSPs各组猪背最长肌低密度脂蛋白胆固醇以及饱和脂肪酸含量均降低(P<0.05),不饱和脂肪酸含量均提高(P<0.05)。可见,生长育肥猪日粮中添加200 mg/kg GSPs能提高背最长肌的抗氧化性能,降低甘油三酯和胆固醇含量,尤其是低密度脂蛋白胆固醇含量,改善脂肪酸组成。
This experiment was conducted to investigate the effects of dietary grape seed procyanidins(GSPs) supplementation on meat quality,conventional nutrient,antioxidant properties,lipid metabolism and fatty acid composition of longissimus dorsi in growing-finishing pigs.Forty-eight crossbred pigs(Duroc×Landrace×Yorkshine) with an average initial body weight of(30.85 ± 3.12) kg were randomly divided into 4 groups with 3 replicates per group and 4 pigs per replicate.The control group was fed a basal diet,and three experimental groups were fed the basal diet supplemented with 150,200 and 250 mg/kg GSPs,respectively(GSPs150,GSPs200 and GSPs250 group,respectively).The feeding experiment lasted for 90 days after a seven-day pre-trial period.The results showed as follows:Compared with the control group,backfat thickness in GSPs200group was significantly decreased,and pH24 h of longissimus dorsi muscle in GSPs250 group was significantly increased.The cooking loss of longissimus dorsi was significantly decreased in groups of dietary supplementation with different concentrations of GSPs.Dietary supplementation with GSPs significantly increased the crude protein content in longissimus dorsi,and when the supplemental concentration was 250 mg/kg,the crude fat content was significantly decreased.The superoxide dismutase activity was increased and the malondialdehyde content was decreased significantly in longissimus dorsi of pigs supplemented with different concentrations of GSPs.The contents of triglyceride and cholesterol in longissimus dorsi of pigs in GSPs200 and GSPs250 groups were significantly decreased.The contents of low density lipoprotein cholesterol and saturated fatty acids muscle were decreased significantly,while the contents of unsaturated fatty acids in longissimus dorsi were enhanced significantly by supplementation with GSPs.In conclusion,diets supplemented with appropriate concentration of GSPs could enhance the antioxidant properties,reduce the contents of triglyceride and cholesterol,especially low density lipoprotein cholesterol,and improve the composition of fatty acids in longissimus dorsi.
